Our recipe for collard greens is delicious and gets rave reviews.

12 lbs. Fresh Collard Greens (after cleaning and washing)
3 lbs. Smoked Ham Hocks or Salt Pork
2 tsp. Black Pepper
3 Tbsp. Salt
1 tsp. MSG
¼ Cup Dehydrated Onions

10″ – 12″ Chef Knife Chopping Board
Pound Scale Set Measuring Spoons
Bus Tub 12-qt Plastic Container with Lid
8-oz. Measuring Cup 24 or 26-qt. Stock Pot with Lid
1-gal. Measuring Pitcher

Render fat from bacon ends and chop bacon into bite-size pieces.

Inspect and cut greens for washing.

Cut stems 1-inch long and cut across leaves every 3 inches.

Place in sink of water with one 8-oz cup of salt. Let stand 5 minutes.

In 1 gallon of water, mix onions, garlic powder, black pepper, MSG, and salt.

Pour this into pot with chopped bacon and drippings.

Bring to a boil for adding greens.

Weigh 12 lbs. of washed greens and place in pot* with other ingredients.

Cook 25-30 minutes. Remove from heat.

Place in plastic storage containers.

Refrigerate immediately.
